Hygiene, health and safety of food in tropical conditions

Abstract
The fight against the presence of zoonotic agents in animal and avian reservoirs has the effect of
reducing risk level against food health management systems, both in their processing and in all
subsequent stages of the Food Chain. To produce and maintain healthy animals, good husbandry practices are required, which includes aspects such as the selection of animals or veterinary care. Food is a key ingredient not only to provide pathogen-free nutrients, but also to offer a balance that keeps them healthy. To obtain a good performance from these, it is important to provide them with drinking water and an ideal environment, which reduces their stress levels, and also establish adequate control of parasites and wildlife. Given that farming is not a sterile environment, initiatives to mitigate zoonotic risks must be practical, economical, flexible and adapted to the proportions of the company, depending on the species treated and the epidemiology of the agents present in each geographic region. An investigation of the
main risks and possible solutions, treatments and measures to be carried out against zoonotic diseases was carried out. With the aim of pedagogically training farmers, producers, workers and workers in the food chain. As a result, we obtained that 77.3% of the producers are unaware of the risks that exist in this area and only 22.7% are aware of it.
